Catering Sous Chef Opportunity

Brother John's Beer, Bourbon & BBQ in Tucson, AZ is seeking a highly motivated Catering Sous Chef to oversee the catering and banquet kitchen operations of our busy restaurant, private dining, and catering operations.

About the Role
  • Lead our culinary team in providing excellent quality upscale menus, smoked meats, sides, and more.
  • Work collaboratively with the Chef, Catering Sales Team, and Front of the House managers to plan and coordinate day-to-day kitchen operations.
  • Manage and train the kitchen team, ensuring a cooperative environment based on teamwork.
  • Interact with guests and crew members, ensuring a great experience and promoting a passion for our product.
Responsibilities
  • Train and motivate BOH team members.
  • Organize and execute food for all private events.
  • Manage the kitchen during busy meal periods while coordinating private events.
  • Manage and track labor dollars and food costs.
  • Keep meat and food coolers organized, rotated, and labeled.
  • Receive products and conduct quality checks.
  • Conduct weekly inventory of all meats and food supplies.
  • Monitor smoke temps, timing, and weather conditions.
  • Prepare kitchen for house-made scratch sides.
  • Participate in local and national competitions representing Brother John's.
  • Participate in local events for charity and promotions.
About Brother John's Beer, Bourbon & BBQ

We serve authentic slow pit-smoked barbecue meats using humanely raised, hormone-free meats. We use locally sourced products whenever possible and prepare food and sides on-site daily in our scratch kitchen.

Qualifications
  • 2 years of supervisor experience in back-of-house operations.
  • Knowledge and passion for culinary arts, including smoked meats and smoking process.
  • Spanish speaking a plus.
  • Serve Safe Certified.
  • Understanding of food preparation and cooking methods, including butchering.
  • Ability to be on your feet for long hours.
  • Availability to work late nights, weekends, and holidays.
