Job Title: Executive Pastry Chef - Culinary Leader

Job Summary:
We are seeking a highly skilled and experienced Executive Pastry Chef to lead our culinary team at Dish Food and Events - Long Island City. As a key member of our team, you will be responsible for creating innovative desserts, managing event production, and maintaining the highest standards of quality and safety.

Key Responsibilities:

Leadership:
Create a positive and inspiring environment for the commissary team.
Maintain a safe and sanitary kitchen as per NYC Dept of Health guidelines, including Covid-19 safety requirements.
Lead kitchen when executive chef is absent with sous chef and Pastry chef.
Assist in hiring, training, scheduling, and managing kitchen and event staff.
Attend off-premise full-service events on an as-needed basis.
Delegate team on event production, commissary cleaning, and organizing.

Production:
Collaborate with Executive Chef to develop daily prep lists and then execute food production in our kitchen, resulting in quality work and delicious food.
Oversee daily, weekly, and monthly inventory of food product and supplies.
Assist the Executive Chef in meeting financial goals for food and labor costs.
Responsible for overseeing the packing and expediting of outgoing events.
Communicate efficiently and effectively with kitchen team, operations department, event staff, sales team, and vendors.
Execute Client tastings and lead at a high-performance level on an as-needed basis.
Update and maintain recipes, costing, and other menu details in catering software.

Research & Development:
Test out flavors of dishes that include sub-recipes.
Measure and weigh individual ingredients using a scale.
Keeping all records up to date and organized.
Creating the recipe to make sense and use of preparation volume.
Learning software program of entering Inventory items and creating the recipe format in the system.
Using the recipe template and using consistency with each new recipe.
Experienced with measuring ingredients in a gram scale and/or ounce.

Cleaning & Sanitation:
Maintaining cleanliness and participating in deep cleaning of any BOH work areas, including and not limited to refrigeration, cooking equipment, and prep areas.
Ensure that food preparation, refrigerators, and storage areas meet the Department of Health and Dish's food safety and sanitation standards.
