As a Chef de Cuisine, you will need a variety of skills and experience such as leadership, production, purchasing, maintenance and research & development.

Job Purpose & Responsibilities 

  • Work alongside the Executive Chef .  Responsibilities would include but not be limited to:

Leadership  

  • Create a positive and inspiring environment for the commissary team. 
  •  Maintain a safe and sanitary kitchen as per NYC Dept of Health guidelines.
  •  Lead kitchen when executive chef is absent with sous chef and Pastry chef
  •  Assist in hiring, training, scheduling and managing kitchen and event staff
  • Attend off premise full service events on an as needed basis
  • Delegate team on event production, commissary cleaning, and organizing. 
  • Alongside, the Executive Chef prepares event questions and changes for production meetings. 

Production/ Purchasing/ Maintenance 

  •  Collaborate with Executive Chef to develop daily prep lists and then execute food production in our kitchen, resulting in quality work and delicious food
  •  Oversee daily, weekly, and monthly inventory of food product and supplies
  •  Assist the Executive Chef in meeting financial goals for food and labor costs
  •  Responsible for overseeing the packing and expediting of outgoing events
  •  Communicate efficiently and effectively with kitchen team, operations department, event staff, sales team and vendors
  •  Execute Client tastings and lead at a high  performance level on an as needed basis
  •  Together with the Operations Manager, Executive Chef and Culinary Administrator, update and maintain recipes, costing, and other menu details in Total Party Planner (catering software)
  • Delegate and oversee facility maintenance for the whole building. 

R&D 

  • Test out flavors of dishes that include sub recipes.
  • Measure and weigh individual ingredients using a scale. 
  • Keeping all records up to date and organized. 
  • Creating the recipe to make sense and use of preparation volume. 
  • Learning TPP program of entering Inventory items and creating the recipe format in the system. 
  • Using the recipe document and using consistency with each new recipe. 
  • Experienced with measuring ingredients in a gram scale and/or ounce. 
  • Understand completely all policies, procedures, standards, specifications, guidelines and training programs.
  • Responsibility and accountability for the quality of products served.
  • Attend all scheduled employee meetings and bring suggestions for improvement.
  • Fully understand and comply with all federal, state, county and municipal regulations that pertain to health, safety and labor requirements of the restaurant, employees and guestsAdhere to mission, policies and core values as described in the Employee Handbook.
    Actively participate in our Continuous Performance Management program including weekly 1:1s, quarterly check ins and annual performance reviews.
