Position Overview
The Nutritional Culinary Specialist is responsible for preparing and serving meals that adhere to proper food handling and safety protocols for residents, staff, and special events. The focus is on delivering dishes that are not only flavorful but also presented attractively and served at the appropriate temperature, all in line with established standards.
Qualifications
Education:
- Minimum of tenth grade or higher
- GED or High School Diploma preferred
Licenses/Certification:
- ServSafe Food Safety Certification preferred
- Food Handlers permit as required by state regulations
Experience:
At least six months of experience in large-scale food preparation is required. Experience with specialized diet preparation is preferred.
Key Responsibilities
- Review menus prior to food preparation.
- Prepare meals for both standard and therapeutic diets according to the planned menu, including meals for staff and special events as directed by the supervisor.
- Develop alternative meal options to accommodate individual dietary needs and preferences.
- Utilize proper food handling and safety techniques during food preparation and portioning, adhering to established policies and regulations.
- Ensure all food is prepared in compliance with sanitary regulations and internal policies.
- Make authorized modifications to the planned menu and document changes as per established procedures.
- Guarantee that meals are not only flavorful but also presented in an appealing manner.
- Maintain accurate records of menus in accordance with established policies.
- Employ standardized recipes for meal preparation.
Knowledge, Skills, and Abilities
- Understanding of safe food preparation and handling practices.
- Basic knowledge of nutrition and food science.
- Proficient in large quantity food production.
- Ability to read and write at a level suitable for the position.
- Effective communication skills with residents, their families, and all organizational levels.

- Proficient in reading, speaking, and understanding English in both verbal and written forms.
