Job Title: Pastry Demi Chef de Partie

We are seeking a skilled Pastry Demi Chef de Partie to join our culinary team at Fairmont Dallas. As a key member of our pastry kitchen, you will be responsible for maintaining the highest standards of food quality and presentation in your workstation.

Key Responsibilities:
  • Review daily production sheets with the Chef de Partie and Sous Chef to ensure accurate planning and execution.
  • Prepare and produce high-quality pastry items in accordance with standardized recipes and specifications.
  • Participate in training junior staff and apprentices to develop their culinary skills.
  • Ensure station opening and closing procedures are carried out to standard, minimizing overproduction and food waste.
  • Operate pastry and kitchen equipment safely and efficiently, adhering to hotel and government Food Safety guidelines.
  • Prepare lists of food products required for station for Sous Chef approval.
  • Contribute to a clean and safe working environment, participating in health and safety initiatives.
  • Adhere to hotel environmental policies and initiatives.
Requirements:
  • 1-year experience and proficiency in pastry.
  • Experience in a luxury hotel with comparable service and standards an asset.
  • Creative and passionate about food and customer service.
  • Able to work in a high-pressure environment.
  • Excellent interpersonal and communication skills; a team player.
  • High School diploma.
  • Culinary art diploma an asset.
  • Previous experience in culinary required.
  • Food Handler certificate required.
Physical Abilities:
  • Exert physical effort in lifting and carrying up to 50lbs.
  • Endure various physical movements throughout the work areas.
  • Reach 1 to 2 feet.
  • Remain in stationary position for up to 8 hours throughout the shift.
  • Frequent walking, standing, kneeling, pushing, pulling, lifting, bending.
  • Occasional ascending or descending ladders, stairs, and ramps.
