Job SummaryWe are seeking an experienced Executive Pastry Chef to lead our pastry arts team. The successful candidate will have a proven track record of managing BOH operations, developing seasonal menus, and training staff. Responsibilities- BOH Operations Management: Oversee and monitor the effective and efficient operation of the BOH, including purchasing standards, inventory management, and food cost control.
- Team Leadership: Provide guidance and leadership to hourly and management teams, fostering a Culture of Caring and promoting teamwork across all teams.
- Menu Development: Research, develop, and execute seasonal menus and new menu items in partnership with divisional leaders.
- Training and Development: Ensure effective BOH training in collaboration with divisional trainers and chefs, and conduct quarterly in-restaurant audits of BOH standard operating procedures and systems.
- Purchasing and Inventory: Partner with designated chefs to purchase and order food product and supplies for the restaurant.
- Recipe Management: Partner with GM and/or designated managers/chefs to regularly review and maintain recipe books, and create new and maintain existing recipe costing.
- Staff Development: Partner with GM and management team to interview, hire, onboard, train, supervise, and develop all BOH employees and teams as needed.
- Guest and Vendor Relations: Use tact and good judgment when dealing with challenges pertaining to guests, vendors, and employees, and respond with patience and courtesy.
- Flexibility and Adaptability: Work a variety of days and shifts, including early mornings, late nights, and weekends, at multiple sites with or without overnight travel, as needed.
- 5+ years of Executive Pastry Chef experience in a full-service restaurant.
- Ability to lead and develop teams.
- Skilled in managing BOH systems.
