Position Overview

The Sous Chef plays a vital role in the culinary team, assisting the Executive Chef in overseeing kitchen operations and staff management. This position is crucial for ensuring the successful execution of menu items, maintaining high standards of guest satisfaction, and managing food and labor costs effectively.

Key Responsibilities

  • Anticipate and address guest needs while fostering positive relationships.
  • Conduct daily reviews of kitchen activities, including inventory management and supply requisition.
  • Ensure compliance with health and safety regulations in food preparation and storage.
  • Supervise kitchen staff, ensuring adherence to grooming and uniform standards.
  • Collaborate with the culinary team to develop new menu items and refine existing recipes.
  • Conduct daily briefings to communicate schedules and operational updates to staff.
  • Maintain cleanliness and organization of the kitchen environment, rectifying any deficiencies.
  • Monitor food costs and train staff on proper food handling and preparation techniques.
  • Assist in the recruitment and training of new kitchen personnel.
  • Prepare and manage weekly work schedules for kitchen staff.

Qualifications

The ideal candidate will possess a high school diploma or equivalent vocational training, with a preference for a college degree in a related field. A minimum of three years of experience in a similar role within a high-end hotel or restaurant setting is required.

Skills and Abilities

The Sous Chef should be highly organized, detail-oriented, and capable of thriving in a fast-paced environment. Strong communication skills, both verbal and written, are essential, along with a comprehensive understanding of culinary techniques and safety standards.

Physical Requirements

This role requires the ability to lift up to 50 pounds and to remain on one's feet for extended periods. The work environment includes exposure to various temperature conditions and noise levels.
