Key Responsibilities
  • Assist the Executive Chef in managing the kitchen staff, including scheduling, training, and performance evaluations.
  • Develop and implement menus, including menu planning, recipe development, and food costing.
  • Ensure the highest quality of food preparation and presentation, adhering to Halekulani Hotel's standards and guidelines.
  • Manage food and labor costs, including inventory management, ordering, and receiving supplies.
  • Maintain a clean and safe working environment, adhering to health and safety standards and regulations.
  • Assist with special events and banquets, including menu planning, food preparation, and service.
  • Collaborate with other departments, including front office, housekeeping, and maintenance, to ensure seamless operations.
  • Perform other duties as assigned by the Executive Chef or other management staff.
Requirements
  • High school diploma or equivalent required; college degree in culinary arts or related field preferred.
  • Minimum three years of experience as a Sous Chef or similar position in a high-end hotel or restaurant.
  • Proven track record of success in managing kitchen staff, developing menus, and maintaining high-quality food preparation and presentation.
  • Strong leadership and communication skills, with ability to work effectively with diverse teams and stakeholders.
  • Knowledge of food safety and sanitation procedures, as well as local health and safety regulations.
  • Ability to work in a fast-paced environment, with flexibility to adapt to changing circumstances.
Working Conditions

The Sous Chef will work in a fast-paced kitchen environment, with exposure to variable temperatures, noise levels, and physical demands. The position requires standing for extended periods, lifting up to 50 pounds, and frequent movement throughout the kitchen.
