JOB SUMMARY:
Responsible for the preparation and assembly of meals for patients and retail services, adhering to established recipes and culinary standards. Ensures compliance with all food safety and quality regulations.

KEY RESPONSIBILITIES:
  • Oversees the preparation of meals for both cafeteria and patient services, ensuring adherence to quality standards and accurate recipe execution.
  • Manages the activities and personnel within the departmental storeroom.
  • Prepares food items according to specified recipes.
  • Delegates daily sanitation and food preparation tasks to junior staff, ensuring all duties are completed satisfactorily.
  • Maintains a clean and organized workspace; ensures the sanitation of all production equipment, countertops, and utensils; conducts regular inspections of the production area.
  • Monitors the use and disposal of leftovers to maintain cost efficiency.
  • Checks on items requiring thawing and ensures proper storage of perishable goods.
  • Trains assigned personnel, ensuring all food items are correctly labeled and dated, and discards any expired products.
  • Assists in evaluating employee performance.
  • Ensures compliance with all regulatory standards and departmental policies.
  • Assists in creating weekly production schedules for staff.
  • Facilitates production meetings as necessary.
  • Contributes to menu planning and development.
  • Fulfills requests for additional items from cafeteria and tray line operations.

Adheres to all regulatory requirements and maintains established departmental policies, including those related to infection control, quality assurance, and safety. Strives for excellence in service delivery as outlined in the CARE Manual.

Responsible for maintaining the confidentiality and security of all protected health information, utilizing only the necessary information to perform job functions.


MINIMUM EDUCATION, EXPERIENCE, AND LICENSE/CERTIFICATION REQUIRED:
At least three years of experience in food preparation, preferably in an institutional environment, or equivalent training. Comprehensive knowledge of cooking techniques, baking, salad preparation, and food procurement, storage, and sanitation practices. Proven ability to read and follow instructions, as well as to understand measurements and recipe guidelines.

Exposure to typical kitchen hazards, including wet floors, noise, cuts, burns, and injuries from kitchen equipment. Light to moderate lifting required.

The individual in this role must demonstrate the necessary knowledge and skills to provide care based on the age of the patients served, understanding the principles of growth and development across the lifespan.
