Job Summary:

As a key member of the Universal Orlando team, you will be responsible for managing the culinary operations of assigned venues or locations, ensuring the highest level of food quality and safety standards are upheld. This role requires strong leadership and communication skills, as well as the ability to develop and train both hourly and exempt team members.

Key Responsibilities:
  • Supervise food preparation and execution of menu items, ensuring adherence to menu specifications and quality standards.
  • Develop and implement new and seasonal menu items that align with venue theme and company brand.
  • Oversee daily practices of cleanliness and safe food handling, working closely with direct reports to uphold HACCP program standards.
  • Manage culinary labor, COG, spoilage, and variances, ensuring food cost targets are met and waste is minimized.
  • Coach and develop hourly and exempt direct reports, ensuring they are properly trained and upholding policies and procedures.
  • Participate in Environmental, Health & Safety responsibilities, following established Universal Orlando policy and procedures.
Requirements:
  • Culinary degree or Chef's Apprentice preferred.
  • 5+ years of culinary experience, with 3+ years in a supervisory role, or equivalent combination of education and experience.
  • Professional Food Manager Certification required.
