Job Title: F&B Manager

At Hilton Marco Island Resort and Spa, we are seeking a highly skilled and experienced Food and Beverage Manager to join our team.

Job Summary:

The successful candidate will be responsible for coordinating the activities of the Grab and Go, room service, gulf cart, and restaurant, ensuring that team members deliver quality products and services to all customers. The F&B Manager will report to the GM of the Deck at 560 and be responsible for monitoring occupancy levels, staffing, and inventory management.

Key Responsibilities:
  • Assign and instruct servers and bartenders in details of work, observing performance and encouraging improvement.
  • Monitor occupancy levels and staff accordingly, training new employees and assisting in schedule preparation and staffing.
  • Ensure that each employee completes their cleaning and side work responsibilities per the daily checklist, reviewing time card edit sheets and making necessary adjustments.
  • Organize and conduct pre-shift and monthly departmental meetings, communicating pertinent information to the team.
  • Schedule and direct staff in their work assignments, assisting with perpetual inventories and par maintenance.
  • Assist in supervision of outlets during the absence of the Restaurant Manager, ensuring par stock levels are maintained by calculating inventories, ordering, and retrieving supplies.
  • Provide management coverage in the Banquet, Restaurant, Room Service, and other F&B departments in the absence of the manager or as scheduled.
  • Handle responsibilities of Server or Bartender in a training/working capacity, moving throughout the Restaurant and Grab and Go areas to ensure quality and service standards are met.
  • Verify measures, judge appearance, and check preparation methods to determine quality, giving guidance toward improvement and making necessary adjustments for consistency.
  • Participate in the monthly Department inventories of glassware and supplies, ensuring the maintenance of equipment and training team members in proper usage.
Requirements:
  • College diploma required, with a degree in hotel/restaurant management or a similar degree preferred.
  • Minimum of 1 year previous working as a supervisory Food or Beverage with food serving experience.
  • Preferably experience in high-volume resort outlets with international students.
  • Ability to obtain Florida State Certified Professional Food Manager Certification, CPR and First Aid Certification, and Responsible Vendors certifications.
Working Conditions:

The successful candidate will be required to work varying schedules to reflect the business needs of the hotel, including weekends and holidays. All employees are required to comply fully with the rules and standards set forth by the Hilton Marco Island Beach Resort & Spa, Olshan Properties, and Hilton Hotels Corporation.
