Job Overview

Crescent Services is seeking a highly skilled and experienced Executive Sous Chef to join our culinary team. As a key member of our kitchen operations, you will be responsible for managing all aspects of the kitchen, including personnel, menu planning, food preparation, and inventory management.

Key Responsibilities
  1. Leadership and Management: Maintain complete knowledge of and ensure associate compliance with all departmental and hotel policies and procedures. Train, recommend performance evaluations, resolve problems, provide open communication, and recommend discipline and/or termination when appropriate.
  2. Menu Planning and Execution: Establish the day's priorities, assign production and preparation tasks for staff to execute, and create daily menu specials. Receive feedback from the Executive Chef and make adjustments as needed.
  3. Inventory Management: Take physical inventory of specified food items for daily inventory, requisition supplies, and ensure that they are received and stored correctly. Communicate needs with Purchasing and Storeroom personnel and ensure quality of products received.
  4. Communication and Collaboration: Communicate both verbally and in writing to provide clear directions to staff. Meet with the Steward to review equipment needs, banquet plate-up assistance, cleaning schedule/project status, health/safety, and sanitation follow-up.
