Executive Chef Opportunity

The Rooftop at the Envio, an AC Hotel Portsmouth property managed by Colwen Hotels, is seeking an experienced Executive Chef to join our team. As a key member of our culinary staff, you will be responsible for maintaining high-quality standards and exceeding guest expectations in food preparation and presentation.

Job Description:

  • Assist in planning, organizing, directing, and controlling kitchen operations and administration.
  • Interact with guests to obtain feedback on product quality and service levels.
  • Oversee and enforce food specifications, portion control, recipes, and sanitation.
  • Assist in hiring, training, supervising, and scheduling associates.
  • Participate in performance management reviews.
  • Create and implement new menus and individual menu items based on current food trends and regional tastes.
  • Prepare, cook, and present food in accordance with productivity standards, cost controls, and forecasts.
  • Analyze labor and food costs to meet/exceed budget.
  • Maintain proper function of kitchen and equipment.
  • Ensure kitchen and equipment cleanliness.
  • Preparation of food as per Banquet Event Orders (BEO).
  • Ensure recipes are properly prepared per standard while maintaining portion control and minimizing waste.
  • Schedule and receive food deliveries, check deliveries for product quality and quantity.
  • Ensure received food products are high quality, stored properly, and rotated FIFO.
  • Attend all hotel meetings as required.

Requirements:

  • 2 years of experience in food and beverage management, preferably in a hotel setting.
  • 2+ years of post-high school education, with a focus on culinary arts desirable.
  • Proven track record in social and corporate catering.
  • Strong knowledge of HACCP procedures and application.
  • Ability to lead and motivate teams under pressure.
  • Excellent verbal and written communication skills.
  • Intermediate to advanced computer skills, including POS system operation.
  • Ability to work rotational schedules, including nights, weekends, and holidays.
