The Executive Chef is a key member of our culinary team at The Marquette Hotel, responsible for overseeing the preparation and presentation of all food items. This role requires a high level of expertise, creativity, and attention to detail to ensure that our guests receive an exceptional dining experience.
Responsibilities:- Supervise and assist in the preparation of all food items, maintaining the highest standards of quality and presentation.
- Ensure the cleanliness, sanitation, and safety of the kitchen and storage areas, minimizing waste and maximizing cost/production ratio.
- Plan meals and assist the Food & Beverage Manager with various assignments, including pricing and menu development.
- Lead and motivate kitchen staff, providing coaching, counseling, and discipline as needed.
- Conduct monthly department meetings and attend weekly staff meetings, providing training and guidance to kitchen personnel.
- Develop and implement systems to control waste, reduce costs, and improve efficiency.
- Review and analyze food sales, menu abstracts, and daily food cost reports to inform menu development and pricing decisions.
- Operate and maintain the Point of Sale (POS) system, ensuring accurate and timely reporting.
- Ensure compliance with Aimbridge Hospitality standards and regulations, maintaining a clean and organized kitchen environment.
- Participate in required M.O.D. coverage and assist the General Manager and Engineering Department in implementing and maintaining emergency procedures.
- At least 5 years of progressive experience in a hotel or related field, with a 2-year college degree and 3 or more years of related experience, or a 4-year college degree and at least 1 to 2 years of related experience.
- Must be proficient in Windows operating systems, Company-approved spreadsheets, and word processing.
- Supervisory experience required.
- Must be able to convey information and ideas clearly, evaluate and select among alternative courses of action quickly and accurately, and work well in stressful, high-pressure situations.
- Must maintain composure and objectivity under pressure, handle problems in the workplace effectively, and have the ability to assimilate complex information, data, etc. from disparate sources.
- Must be effective at listening, understanding, clarifying, and resolving concerns and issues raised by coworkers and guests.
- Must be able to work with and understand financial information and data, and basic arithmetic functions.
