Culinary Operations Manager

Overview:

The Culinary Operations Manager plays a critical role in the success of our Central Kitchen, working closely with the Executive Chef and Executive Sous Chef to ensure seamless daily operations. This includes hands-on safety and sanitation, production and presentation of goods for the park, par levels, and quality control. In the absence of the Executive Chef or Executive Sous Chef, the Culinary Operations Manager oversees the activities of the Central Kitchen staff.

Responsibilities:

  • Oversee daily operations of the Central Kitchen and packaging room production, creating production lists based on need and delegating tasks to other members of the culinary team.
  • Maintain a solid knowledge of all goods and apply culinary and cooking techniques consistently, ensuring product quality, freshness, and presentation meet company standards.
  • Ensure compliance with state and federal regulations regarding food storage, handling, and preparation, as well as maintenance and safety standards.
  • Train, motivate, and manage kitchen personnel, supervising culinary associates and monitoring recipes and inventory levels.
  • Counsel team members and enforce policies and procedures, creating a positive work environment by leading through example.
  • Monitor business flow and report needs to the Executive team.

Qualifications:

  • High school diploma/GED required.
  • At least 4-6 years of prior, relevant work experience.
  • At least 3-5 years of supervisory/leadership experience.
  • Basic computer skills, including Microsoft Outlook, Excel, and Word.
  • California Food Handler's Card.
  • College or culinary training, or extensive cooking and production experience.
  • Understanding of proper use and maintenance of major kitchen equipment.
  • Ability to work nights, weekends, and holiday periods to meet business needs.
  • Ability to pass a mandatory drug test and background check.
  • ServSafe Food - Manager level certification required.
  • Food handler's permit required.
  • ServSafe Alcohol certification required.
  • Valid Driver's License.
