ROLE SUMMARY

The Assistant Kitchen Manager oversees the kitchen staff and takes charge of kitchen operations in the Chef's absence. Responsibilities include menu planning, development, and cost management, while ensuring top-tier standards for quality and service, with an emphasis on seasonal produce. This role also involves supporting the recruitment, training, and performance evaluation of kitchen personnel.

KEY RESPONSIBILITIES

  • Ensure compliance with established standards, procedures, and sanitation regulations among kitchen staff.
  • Monitor sanitation practices to guarantee adherence to health and safety standards.
  • Assess the quality of raw and cooked food items to ensure they meet established criteria.
  • Guide cooks and kitchen staff in food preparation, cooking techniques, and presentation.
  • Manage kitchen opening and closing procedures as directed by the Executive Chef.
  • Prepare and deliver a variety of high-quality dishes according to guest orders, following approved recipes and specifications.
  • Coordinate with the kitchen team to ensure timely delivery of menu items.
  • Maintain comprehensive knowledge of recipes, ingredients, allergens, and food presentation standards.
  • Ensure that all food products are properly labeled, dated, and rotated in accordance with FIFO (first in, first out) practices.
  • Uphold cleanliness and organization within the kitchen, adhering to safe work practices and food safety regulations.
  • Follow all company policies and ethical guidelines to protect the organization’s assets and reputation.
  • Perform additional duties as required by business needs.

QUALIFICATIONS AND SKILLS

  • Minimum of 2 years of progressive culinary management experience in a high-end food and beverage setting.
  • Culinary degree or certification is highly preferred.
  • Extensive knowledge of various culinary styles and proficiency in all cooking stations, with the ability to train and mentor team members.
  • Professional demeanor and strong leadership skills in a fast-paced environment.
  • Ability to think quickly and manage multiple tasks efficiently.
  • Strong communication and interpersonal skills that foster a collaborative team atmosphere.
  • High standards for cleanliness and organization in workspaces.
  • Flexibility to work in a dynamic environment, both independently and as part of a team.
  • Strong work ethic with a customer-focused mindset.
  • Willingness to work a flexible schedule, including evenings, weekends, and holidays.

PHYSICAL DEMANDS
