Position Scope:
The Assistant Culinary Manager is accountable for ensuring food excellence, guest satisfaction, staff training, kitchen hygiene, food cost management, and a secure working environment.
This role involves delegating daily responsibilities and effectively communicating with team members regarding operational matters, menu specials, food quality, presentation, cleanliness, and other essential standards.
Key Responsibilities:- Oversee kitchen operations during shifts, ensuring adherence to all Food & Beverage policies, standards, and procedures.
- Assess weekly production requirements and relay daily needs to kitchen staff.
- Support the Executive Chef in all kitchen functions and preparations.
- Ensure compliance with local, state, and federal regulations (e.g., OSHA, ASI, Health Department).
- Assist in determining food presentation and creating appealing food displays.
- Uphold food handling and sanitation standards.
- Follow proper food handling procedures and maintain appropriate temperatures for all food items.
- Operate and maintain all kitchen equipment, reporting any malfunctions.
- Maintain standards for purchasing, receiving, and food storage.
- Supervise and coordinate the activities of cooks and kitchen staff engaged in food preparation.
- Ensure staff productivity levels are maintained.
- Administer property policies consistently and fairly.
- Assist in the preparation of payroll, reports, forecasts, inventory, and budgets for food and beverage operations.
- Manage food production to minimize waste and excessive leftovers.
Conduct daily inspections of the kitchen to ensure compliance with health regulations and standards.
Foster positive relationships among kitchen, stewarding, and dining room staff.
Assist in the recruitment, interviewing, and hiring of staff; conduct performance evaluations, provide coaching and counseling, implement corrective actions, and promote development and training.
Ensure daily team meetings are held.
- Participate in departmental meetings, conveying a clear and consistent message regarding departmental objectives to achieve desired outcomes.
- Perform any other reasonable duties as assigned by management.
Position Requirements:
- Professional demeanor suitable for a luxury environment.
- Minimum of 3 years' experience in a supervisory or leadership role within a luxury hotel or fine dining establishment.
- Strong background in restaurant operations.
- Proven success in high-volume environments, excelling in customer service and enhancing profitability.
Education:- Certification from the American Culinary Federation (ACF) as a "Restaurant Chef" or a culinary degree from a recognized culinary institution, along with equivalent experience.
Skills and Abilities:
- Proficient communication skills in English; proficiency in a second language is advantageous.
- Knowledge of proper chemical handling, cleaning methods, and equipment operation.
- Flexibility to work varied schedules, including holidays and weekends, while managing multiple tasks.
- Familiarity with computer software programs such as Microsoft Office (Word, Excel, and Outlook).
Physical Requirements:
- Ability to thrive in a fast-paced environment.
- Medium work - capable of exerting up to 50 pounds of force occasionally, and/or 20 pounds of force consistently to lift, carry, push, pull, or otherwise move objects, including carts weighing up to 200 pounds.
Requires standing, walking, reaching, and bending throughout the shift.
