Position Summary

OBJECTIVE:

Under the supervision of the Director of Food & Beverage and/or Executive Chef, the Executive Chef will oversee, manage, and direct all facets of food production within the outlets, ensuring the profitability of Food and Beverage operations while upholding the highest standards of quality and service. This role involves training staff, adhering to corporate quality benchmarks, and maintaining the integrity of culinary offerings. The Executive Chef will also focus on controlling food and labor costs while enhancing guest satisfaction.

KEY RESPONSIBILITIES:
  • Demonstrates culinary expertise by actively participating in kitchen tasks while leading the team and managing food production systems.
  • Embodies and promotes the company's quality standards and service excellence.
  • Mentors and develops lower management and kitchen staff.
  • Provides clear guidance and attainable objectives for the culinary team.
  • Fully supports and adheres to all Corporate Programs.
  • Supervises food preparation, presentation, and portion control, ensuring adherence to the highest culinary standards.
  • Oversees all kitchen operations to guarantee consistent high-quality food production.
  • Collaborates with the Regional/Corporate Chef on menu development.
  • Accountable for the overall success of culinary operations.
  • Enhances profitability through diligent monitoring of inventory, food cost management, and strategic promotional initiatives.
  • Manages direct labor costs associated with kitchen staff, creating efficient weekly schedules to maximize productivity.
  • Ensures compliance with company policies as outlined in the employee handbook.
  • Responsible for maintaining optimal staffing levels through proactive recruitment.
  • Supervises the training of new team members, ensuring they understand the expected high standards.
  • Utilizes ongoing training and support to cultivate a motivated kitchen team, documenting training sessions and assessing staff progress through regular evaluations.
  • Ensures timely and consistent performance management and staff development.
  • Performs other reasonable duties as assigned by management.
  • Recognizes the nature of the hospitality industry, occasionally requiring team members to perform various related tasks to provide exceptional service.

Qualifications

SPECIFIC KNOWLEDGE, SKILLS, AND ABILITIES:

The ideal candidate will possess the following qualifications and be able to demonstrate the ability to perform essential job functions, with or without reasonable accommodation:
  • Preferred Culinary Arts degree or Bachelor's Degree.
  • Strong understanding of food safety and sanitation; Servsafe certification required.
  • A minimum of 5 years of culinary experience in a supervisory role within a restaurant kitchen, preferably at the Chef de Cuisine or Sous Chef level in an upscale hotel environment.
  • Solid financial acumen, including budget management and cost control practices.
  • Proficient in mathematical calculations and percentages.
  • Ability to stand, walk, and bend continuously to perform essential job functions.
  • Exceptional communication skills in English, both written and verbal, with the ability to engage with guests and staff effectively.
  • Ability to thrive under pressure and manage stressful situations during peak periods.
  • Competence in using moderately complex computer systems for information input and management.
  • Proficient in Microsoft Office Suite: Word, Excel, PowerPoint, Publisher, etc.
  • A dynamic leader with an entrepreneurial mindset, innovative thinking, and a focus on team motivation and coaching.
  • Experience with luxury brands is preferred.
