Job Summary

We are seeking a highly skilled and experienced Sous Chef to join our team at Courtyard DFW Airport N Grapevine. As a key member of our culinary team, you will be responsible for assisting the Executive Chef in planning and directing food preparation in our kitchens.

Responsibilities
  • Assist the Executive Chef in menu planning and development, ensuring that dishes are innovative and meet the highest standards of quality and presentation.
  • Train and supervise kitchen staff, ensuring that they adhere to restaurant policies and general sanitation regulations.
  • Organize schedules and direct the work of the kitchen staff, ensuring that kitchen operations are carried out efficiently and effectively.
  • Design and implement aesthetic plating presentations that enhance the dining experience.
  • Ensure that hygiene and food safety requirements are met, maintaining a clean and safe kitchen environment.
  • Manage kitchen inventory and budget, minimizing waste and optimizing resources.
  • Approach all interactions with guests and employees in a friendly and service-oriented manner, maintaining a positive and professional attitude.
  • Maintain high standards of personal appearance and grooming, adhering to brand standards.
  • Comply with certification requirements, including Food Handlers, Alcohol Awareness, CPR, and First Aid.
  • Perform spot checks for menu accuracy and taste, ensuring that dishes meet the highest standards of quality.
  • Minimize spoilage, waste, and overproduction, maintaining a lean and efficient kitchen operation.
  • Regularly review house counts, forecasts, and VIP lists, ensuring that kitchen operations are aligned with business needs.
  • Monitor all Banquet and Catering activity, ensuring that events are executed flawlessly.
  • Maintain all kitchen inventories, ensuring that supplies are adequate and organized.
  • Prepare annual reviews of employees, providing constructive feedback and guidance.
  • Assist in the achievement of departmental objectives and goals, working collaboratively with the Executive Chef and other team members.
  • Expedite peak meal periods by maintaining a 'hands-on' approach, ensuring that kitchen operations run smoothly and efficiently.
  • Work within monthly set food cost budget, adjusting food requisitions and controlling waste.
  • Be familiar with all Aimbridge Hospitality policies and house rules, as well as hospitality terminology.
  • Ensure that plating standards and use records are posted according to Aimbridge Hospitality standards.
  • Review food sales for accuracy daily, ensuring that financial data is accurate and up-to-date.
