The Assistant Director of Food & Beverage at Great Wolf Lodge plays a pivotal role in the management and execution of all food and beverage operations. Reporting directly to the Director of Food & Beverage, this position is responsible for overseeing the planning, presentation, and service of culinary offerings, with a particular emphasis on special events and departmental efficiency.

Key Responsibilities:

  • Support the Director in managing daily administrative functions and strategic planning for the Food and Beverage Department to meet operational goals.
  • Contribute to the achievement of operational objectives by providing insights and recommendations for strategic initiatives; prepare action plans and implement quality and service standards.
  • Engage in the recruitment, training, and development of team members, ensuring clear communication of job expectations and adherence to company policies.
  • Ensure compliance with training programs and maintain high standards of service through regular audits and feedback.
  • Collaborate with culinary leadership to ensure timely and quality preparation of food and beverages across all dining venues.
  • Work with the Executive Chef and Purchasing Team to maintain inventory levels and compliance with health regulations.
  • Assist in managing costs through effective portion control and waste reduction strategies.
  • Ensure all food and beverage areas adhere to cleanliness and safety standards through regular inspections and audits.
  • Oversee scheduling and payroll activities in collaboration with the HR department.
  • Participate in inventory management to ensure budget compliance and optimal stock levels.
  • Conduct pre-shift meetings and service evaluations to enhance guest satisfaction and operational performance.
  • Support the Director in achieving departmental goals related to culinary, stewarding, and purchasing functions.
  • Ensure compliance with safety regulations and maintain a safe working environment for all staff.

Qualifications:

  • High School diploma or equivalent; a Bachelor's degree in hospitality or related field is preferred.
  • 2-3 years of management experience in food and beverage operations.
  • Proficient in inventory control systems and financial management.
  • Strong communication skills and ability to lead a diverse team.
  • Knowledge of food safety and sanitation regulations.

Physical Requirements:

  • Able to lift up to 30 lbs.
  • Capable of standing for extended periods.
