Key Responsibilities:
  • Train and oversee kitchen staff in the proper preparation of menu items, equipment usage, and safety protocols.
  • Assess performance and provide guidance as needed to ensure quality outcomes.
  • Conduct visual inspections, selecting only the highest quality ingredients for menu preparation.
  • Utilize mathematical skills to accurately follow recipes.
  • Prepare requisitions for supplies and food items necessary for production at workstations.
  • Ensure items are correctly packaged, labeled, and organized for distribution to various outlets.
  • Guarantee adherence to recipes to maintain consistency in products delivered across the property.
  • Manage effective stock rotation and maintain inventory levels, including the proper use of equipment.
  • Strictly follow food control procedures.
  • Assist in maintaining and enhancing departmental operational standards.
  • Lead and motivate the team to foster a positive work environment and ensure high levels of commitment and pride.
  • Stay informed of and comply with the World Equestrian Center's company policies and regulations.
  • Enforce sanitary practices for food handling, cleanliness, and maintenance of kitchen and dining areas.
  • Ensure compliance with operational standards, company policies, and all applicable laws and regulations.
  • Schedule culinary staff to maintain adequate coverage while managing payroll costs.
  • Monitor production flow and make adjustments as necessary to control expenses.
  • Supervise proper receiving, storage (including temperature settings), and rotation of food products in accordance with Health Department regulations.
  • Provide guidance to team members on operational and procedural matters.
  • Possess comprehensive knowledge of all departmental policies, standards, and procedures.
  • Be familiar with resort services, amenities, and outlets.
  • Be available for work assignments outside of regular hours, including evenings, weekends, and holidays.
  • Adhere to all safety regulations and protocols.
  • Comply with all property policies and procedures as communicated by management.

Qualifications, Education, Experience, Skills, and Abilities:
  • Minimum of 5 years of culinary experience required.
  • Must be able to understand, read, and write in English.
  • Must demonstrate excellent attention to detail.
  • Basic knowledge of Microsoft Office is required.
