Job Overview and Responsibilities
Under the supervision of the Lead Culinary Manager, the Correctional Culinary Supervisor oversees and manages the kitchen staff in the preparation and distribution of meals for the inmate population. This role is accountable for the receipt, storage, rotation, preparation, and reheating of food items. It is essential to maintain the appropriate quantity, quality, and visual appeal of all food products. The supervisor also collaborates with other Correctional Culinary Supervisors to coordinate food service operations.
Key Responsibilities:
- Supervise kitchen personnel in food preparation and service.
- Ensure compliance with health and safety regulations.
- Monitor inventory levels and manage food supplies.
- Train and mentor kitchen staff in culinary techniques and safety practices.
- Conduct regular inspections of food quality and presentation.
Minimum Qualifications:
EITHER I
Experience: One year of experience in the California state service performing the duties of a Cook Specialist II (Correctional Facility) or a Cook Specialist II.
OR II
Experience: Two years of experience in a supervisory role overseeing cooks and other food service personnel, with responsibilities including the preparation, cooking, and serving of various food items, and Education: Equivalent to completion of the twelfth grade.
Candidates eligible for a Training and Development assignment may also be considered for this position.
Working Conditions:
Travel may be required.

Verification of Minimum Qualifications will occur prior to interview and/or appointment. If meeting Minimum Qualifications through education, unofficial transcripts/diploma must be included for verification. Official transcripts may be required upon appointment. Candidates not meeting Minimum Qualifications will be removed from the eligibility list, rendering them inactive and ineligible for hire. Candidates withheld may appeal with the State Personnel Board.
New candidates to the California Department of Corrections and Rehabilitation or the Division of Juvenile Justice must undergo a background investigation process, including Live Scan Fingerprinting and Tuberculosis testing prior to appointment, followed by annual Tuberculosis testing/evaluation thereafter.
