Job Description and Duties

Under the general direction of the Food Administrator I, Correctional Facility (CF), the Supervising Correctional Cook directs, trains, and supervises Cook Specialist I, CF staff and inmates preparing and serving meals and storing food and supplies at the Diet Kitchen at a correctional facility.

Responsibilities:
  • Maintain culinary equipment in sanitary and clean working order.
  • Ensure the work area is clean and orderly.
  • Interpret and verify compliance with regulations that govern the sanitation and safety of all aspects of the food service program.
  • Direct, train, and supervise Cook Specialist I, CF staff and inmates.
Requirements:
  • Either one year in the California state civil service performing the duties of a Correctional Supervising Cook (Correctional Facility) or two years of experience in a supervisory capacity over cooks and allied workers with responsibility for supervising, planning, and scheduling the preparation, cooking, and serving of three meals a day for at least 300 persons per meal.
Working Conditions:

Travel is required.
