Job Summary
We are seeking an experienced and skilled Executive Pastry Chef to join our team. As a key member of our culinary team, you will be responsible for overseeing the pastry kitchen, managing a team of pastry chefs, and creating innovative and delicious pastry products that meet the highest standards of quality and presentation.
Key Responsibilities
- Pastry Kitchen Management
- Oversee the daily operations of the pastry kitchen, ensuring that all pastry products are prepared and presented to the highest standards of quality and presentation.
- Manage a team of pastry chefs, providing guidance, training, and development opportunities to ensure that they have the skills and knowledge needed to excel in their roles.
- Menu Development
- Work with the culinary team to develop new and innovative pastry products that meet the highest standards of quality and presentation.
- Ensure that all pastry products are developed and produced in accordance with DO&CO's quality and safety standards.
- Cost Control
- Monitor and control food costs, ensuring that they are within budget and that waste is minimized.
- Work with the purchasing team to source high-quality ingredients at competitive prices.
- Food Safety and Hygiene
- Ensure that all food safety and hygiene regulations are met, including HACCP and food safety management system standards.
- Report any food safety or hygiene issues to the management team and the hygiene and food safety team.
Requirements
- Experience
- Minimum of 3 years of experience in pastry or bakery management, preferably with a large production volume and team management experience.
- Qualifications
- Certificate in culinary arts, pastry-making, baking, or relevant field.
- Skills
- Full knowledge of baking ingredients, measuring techniques, mixing methods, kitchen equipment, and baking times.
- Excellent leadership and management skills, with the ability to motivate and develop a team of pastry chefs.
- Strong communication and interpersonal skills, with the ability to work effectively with the culinary team, management, and other stakeholders.
