As a Culinary Specialist, you will collaborate with a Registered Dietitian, taking charge of the coordination, planning, and preparation of daily meals and snacks for all clients/patients, adhering to dietitian-approved menus. The Culinary Specialist ensures that all meals prepared for and served to the client/patient population meet quality standards.

Qualifications:

  • High School Diploma or equivalent, or verifiable work experience in lieu of education
  • CPR/MANDT certification – training provided locally and updated as necessary.

Preferred Qualifications:

  • 1-3 years of experience in institutional cooking preferred.
  • Food handler or SERV Safe Certification preferred.

Key Responsibilities:

  • Prepare and present food for clients/patients in accordance with dietitian-approved menus and standardized recipes.
  • Meet or exceed quality standards through regular tasting for flavor and consistency, monitoring cooking/serving temperatures, and visual inspections.
  • Adhere to the appropriate menu and production guidelines for food.
  • Demonstrate basic skills in food preparation and the safe use of equipment, along with effective organization and planning to meet menu demands.
  • Maintain food temperatures throughout the entire preparation process.
  • Utilize food-handling techniques as outlined in company and departmental policies and procedures.
  • Properly store unused food items (labeling and dating).
  • Report necessary repairs and/or supply needs to the manager.
  • Clean all work surfaces, ovens, fryers, grills, refrigerators, and stovetops according to the posted cleaning schedule.
  • Ensure that the dietary department complies with Joint Commission/CARF accreditation standards, state regulatory requirements, and other applicable regulations.
  • Follow strict sanitation guidelines established by the state health department.
  • Adhere to all company safety and risk management policies and procedures.
  • Participate in regular safety meetings, training sessions, and hazard assessments.
  • Attend team meetings and complete all required training courses in a timely manner.
  • Perform other duties as assigned.
