The Assistant Director of Food & Beverage at Great Wolf Lodge plays a pivotal role in overseeing the comprehensive management of food and beverage operations. Reporting directly to the Director of Food & Beverage, this position is responsible for orchestrating all facets of food and beverage planning, presentation, and service, with a keen focus on special event coordination and implementation.
Key Responsibilities:
- Support the Director in managing daily administrative functions and strategic planning for the Food and Beverage Department to achieve operational goals.
- Contribute to operational success by providing insights and recommendations for strategic initiatives, preparing action plans, and ensuring adherence to quality and customer service standards.
- Engage in the recruitment, training, and development of team members, ensuring clear communication of job expectations and performance feedback.
- Oversee compliance with training programs and ensure team members are well-versed in operational standards.
- Lead staff in delivering exceptional guest experiences by anticipating and addressing their needs.
- Collaborate with culinary leadership to ensure timely and quality preparation of food and beverages across all dining venues.
- Work with the Executive Chef and Purchasing Team to maintain inventory levels and compliance with health regulations.
- Assist in controlling food costs through regular reviews and implementing waste reduction strategies.
- Ensure all food and beverage areas meet local and national health and safety standards through regular audits and inspections.
- Coordinate with HR to ensure accurate scheduling and payroll management.
- Monitor equipment functionality and arrange for necessary maintenance and repairs.
- Participate in inventory management to maintain budgetary controls.
- Conduct pre-shift meetings and service evaluations to uphold guest satisfaction and operational standards.
- Assist in achieving departmental goals related to culinary, stewarding, and purchasing functions.
- Ensure compliance with safety regulations and training for all team members.
Qualifications:
- High School diploma or equivalent experience required.
- 2-3 years of management experience in food and beverage operations.
- Proficient in inventory control and procurement processes.
- Flexibility in scheduling to meet business needs.
- Strong communication skills, both written and verbal.
- Experience in P&L management and analytical problem-solving.
- Detail-oriented with excellent time management abilities.
- Familiarity with hospitality software and systems.
- Completion of background checks and drug screening is mandatory.
- Knowledge of food safety and sanitation regulations.
Preferred Qualifications:
- Bachelor's degree in hospitality, business, or a related field.
- Experience in developing training programs for food and beverage operations.
- Certification in food safety and alcohol awareness.
- Strong teamwork and conflict resolution skills.
- Experience in kitchen and bar equipment maintenance.
Physical Requirements:
- Able to lift up to 30 lbs.
- Capable of bending, stretching, and standing for extended periods.
