Executive Culinary Director

Raines Co. is seeking a highly skilled and experienced Executive Chef to lead our culinary team. As a key member of our management team, you will be responsible for overseeing all aspects of food production and service, ensuring high-quality products and exceptional guest satisfaction.
Key Responsibilities:- Coordinate and supervise food preparation and service across all outlets, maintaining the highest standards of quality and presentation.
- Ensure the cleanliness, sanitation, and safety of kitchens, service stations, and work areas, minimizing waste and maximizing cost-effectiveness.
- Plan and direct meal service, guiding kitchen staff on various assignments, including pricing, banquets, and display merchandising.
- Provide oversight of kitchen staff, outlets, banquet food, and department operations, ensuring seamless execution and high-quality results.
- Control food and labor costs, consistently delivering high-quality menu items and maximizing guest satisfaction.
- Work effectively in high-pressure situations, maintaining composure and objectivity under pressure.
- Anticipate, prevent, identify, and solve problems as necessary, ensuring a positive work environment and exceptional guest experience.
- Listen, understand, clarify, and resolve concerns and issues raised by colleagues and guests, fostering a culture of open communication and collaboration.
- Analyze financial information and data, making informed judgments to ensure proper payroll and production control.
- Knowledge and experience with forecasting, budgeting, labor management, and purchasing to ensure maximum productivity and efficiency.
- Stay informed about local competition and industry trends, adapting our culinary offerings to meet evolving guest preferences.
- Holds and maintains applicable certifications, including Food Handler, Alcohol Awareness, CPR, First Aid, ServSafe, and any required certifications.
- Minimum four years of progressive experience in hotels, restaurants, or related fields, or a bachelor's degree and two years of related experience, or an associate's degree and three years of related experience.
- Kitchen proficiency and culinary training and experience.
- Supervisory experience.
- Proficient in Microsoft Office or similar computer applications.
- Prior Sous Chef, Lead Chef, or Executive Chef experience preferred.
- Certifications as required by Federal, State, or Local agencies (ServSafe Certification) preferred.
- Valid driver's license and reliable transportation, with the ability to run off-property errands with minimal notice.
- Fluent English language skills.
- Excellent written and oral communication skills.
- Mathematical skills, including basic math, budgeting, profit/loss concepts, percentages, and variances.
- Problem-solving, reasoning, motivating, organizational, and training abilities.
- Ability to effectively multi-task.
