Position Details
Role: Culinary Operations Assistant Manager
Status: Full-time / Exempt
Work Schedule: Flexible - Includes Days, Evenings, and Weekends

Role Summary
The Culinary Operations Assistant Manager will oversee all kitchen activities, including assisting with procurement, food preparation, maintaining quality standards, sanitation, and training staff in cooking methods, presentation, portion control, and hygiene practices.

Key Responsibilities

  • Promote and embody the mission of A. Marshall Hospitality: "To make every person we interact with feel like family and to make every guest a fan."
  • Ensure consistent preparation and presentation of food according to established recipes and standards.
  • Collaborate with management to design and price menu items, establish portion sizes, and create recipe cards for new dishes.
  • Supervise kitchen staff and coordinate food preparation activities.
  • Manage food preparation and cooking activities across multiple locations.

Quality Assurance

  • Monitor sanitation practices to ensure compliance with health regulations.
  • Inspect food products to ensure quality standards are met.
  • Maintain proper food storage and temperature control.
  • Engage with guests to discuss menu options for special events.

Operational Duties

  • Maintain cleaning schedules for kitchen areas and equipment.
  • Ensure all kitchen equipment is clean and in good working order.
  • Inspect supplies and equipment for compliance with standards.
  • Order necessary food and supplies to ensure efficient operations.
  • Oversee delivery processes to ensure adherence to receiving policies.
  • Plan production schedules and staffing needs for timely service delivery.

Financial Management

  • Assist in budgeting and purchasing for kitchen operations.
  • Estimate required supplies and manage food costs effectively.
  • Analyze recipes to determine pricing based on costs.

Team Leadership

  • Make hiring and termination decisions, including interviewing and evaluating kitchen staff.
  • Provide orientation and training for new employees.
  • Ensure timely performance evaluations are conducted.
  • Instruct staff in food preparation and presentation techniques.
  • Schedule staff according to business needs while managing labor costs.

Essential Skills & Qualifications

  • Must be at least 21 years old.
  • Reliable transportation is required.
  • Minimum of two years' experience in a leadership role within a full-service kitchen.
  • Ability to lift up to 50 pounds and stand for extended periods.
  • Strong communication and leadership skills with a focus on respect and dignity for all team members.
