Job Overview:

The Arizona Department of Juvenile Corrections (ADJC) is on the lookout for dedicated Cook 1 candidates who are enthusiastic about their culinary skills and are eager to positively impact the lives of Arizona's youth in need. The Cook 1 will be responsible for preparing, portioning, cooking, and presenting a diverse range of hot and cold food items for various meal services, including Breakfast, Lunch, Dinner, and Special/Catered Events. At ADJC, you will have the opportunity to work collaboratively within a skilled and diverse Food Service Team.

Key Responsibilities:


• Mentor, assess, guide, and supervise youth in vocational skills and appropriate conduct.

• Implement crisis intervention strategies with youth employees as needed.

• Document reports, maintain logs, and fulfill required documentation for the National School Lunch/Breakfast Program (NSLP/SBP).

• Ensure a safe environment in the Food Services Division by adhering to established security protocols.

• Uphold food safety and operational standards in the kitchen as mandated by health regulations.

• Manage and track kitchen equipment and supplies, ensuring proper quality and quantity in accordance with set standards.

• Plan and prepare all meals, including those for special dietary needs.

• Perform additional duties as assigned.

Required Knowledge, Skills & Abilities:

Knowledge of:

• National School Lunch/Breakfast Program guidelines.

• Large-scale food production, food service equipment, and food distribution systems.

• Food service sanitation standards and safety regulations.

• Inventory management and accounting methods.

• Interview techniques and evaluation processes.

• Proven experience in high-volume food preparation, inventory management, and adherence to food safety regulations.

Skills in:

• Basic mathematics.

• Proficient computer usage.

Ability to:

• Acquire knowledge of Federal, State, and Agency rules and regulations.

• Understand and comply with agency policies and procedures.

• Learn youth management and intervention techniques.

• Master radio communication protocols.

• Understand security practices, including crisis intervention and restraint techniques.

• Familiarize with educational vocational program requirements.

• Effectively de-escalate youth behavior.

• Collaborate closely with adjudicated youth in a secure institutional environment.

Preferred Qualifications:

The ideal candidate will possess:

• Experience working with adult or juvenile populations.

• Background in large-scale kitchen operations (over 1,000 meals daily).

• Knowledge of security practices, including crisis intervention and restraint techniques.

• Familiarity with educational vocational program standards.

• Training in juvenile management techniques.

• Understanding of security protocols and key management.

• Bilingual proficiency in Spanish/English is preferred but not mandatory.

Pre-Employment Criteria:

REQUIRED: Experience in food preparation from scratch, including soups, sauces, stocks, gravies, and plate presentation.

REQUIRED: Ability to obtain a Serv-Safe Manager and Basic certificate within two months of employment.

REQUIRED: Employment is contingent upon passing a comprehensive background check, behavioral assessment, drug screening, and physical examination. No felony convictions are permitted.

A valid Maricopa County food handler's permit is required at the time of employment.

If driving is an essential function of the job, candidates must possess a current, valid driver's license and meet all necessary training and record checks.

All new State employees must successfully complete the Electronic Employment Eligibility Verification Program (E-Verify).

Current State of Arizona employees must have an acceptable performance history to be considered for this position.
