Assistant Culinary Leader Responsibilities:
The Assistant Culinary Leader supports the Executive Chef in all operational facets of the kitchen. This role is second in command, responsible for executing the Executive Chef's directives and overseeing daily operations, staff management, and maintaining brand quality.
Key Duties:
- Implementing the Executive Chef's directives efficiently.
- Capable of performing all kitchen positions and assisting staff during peak times.
- Overseeing the preparation of all menu items.
- Ensuring adherence to safety and emergency protocols.
- Expediting orders accurately to maintain kitchen workflow.
- Utilizing standard recipe cards and plating guides effectively.
- Securing all storage areas.
- Conducting line checks, including temperature monitoring and food rotation.
- Assisting in the creation and execution of daily specials.
- Coordinating closing duties for kitchen staff.
- Upholding food quality standards and seasonal relevance.
- Possessing strong communication skills for requisitioning and inventory management.
- Collaborating with staff to ensure compliance with company standards.
- Maintaining high cleanliness standards in the kitchen.
- Participating in management meetings and addressing kitchen issues.
- Assisting with daily ordering and weekly scheduling.
- Monitoring kitchen crew to prevent breakage.
- Inspiring and motivating kitchen personnel.
Financial Accountability:
- Monitoring daily labor and food cost reports to ensure budget compliance.
- Reviewing monthly profit and loss statements and addressing variances.
- Ensuring all overtime is pre-approved.
Qualifications:
- Minimum of 2 years of leadership experience in a similar culinary environment.
- Proficient in producing all Mother Sauces and stocks.
- Skilled in fabricating various meats, fish, and poultry.
- Knowledgeable about herbs and seasonings.
- Intermediate to advanced pastry and Garde Manger skills.
- Familiarity with diverse culinary traditions.
- Strong product identification skills in produce, meats, and equipment.
- Ability to train others in basic cooking methods.
- Excellent knife skills and ability to teach proper cutting techniques.
- Management certification in accordance with health department regulations.
