Position Overview

Grand Dukes Restaurant is seeking a talented Executive Chef to lead our culinary team.

Key Responsibilities:

  • Supervise all kitchen operations during mid- and closing shifts, managing inventory, ordering, and controlling food and labor expenses.
  • Oversee back-of-house (BOH) shifts, ensuring efficient operations, food preparation, and cooking, while maintaining adequate inventory levels of food and supplies.
  • Conduct pre-shift meetings and participate in line checks, temperature assessments, and food tastings.
  • Collaborate with the General Manager and other designated chefs to regularly update and maintain recipe documentation.
  • Perform routine line checks throughout service to guarantee the quality of all menu offerings.
  • Order and procure food products and supplies for the restaurant, including daily inventory needs.
  • Facilitate effective communication regarding food production and timing issues between front-of-house (FOH) and BOH teams.
  • Work closely with management to recruit, onboard, train, supervise, and develop all BOH personnel.
  • Encourage and model teamwork across all departments.
  • Exercise tact and sound judgment when addressing challenges with guests, vendors, and staff, responding with patience and professionalism.
  • Be prepared to work a flexible schedule, including early mornings, late nights, and weekends, with potential travel as required.
  • Capable of lifting and moving items up to 50 pounds as necessary.

Qualifications:

  • Minimum of 5 years of experience as an Executive Chef in a full-service dining establishment.
  • Proven ability to lead and manage kitchen staff effectively.
