Position Overview

Key Responsibilities

  • Manage the preparation of desserts, breads, and pastries, ensuring that established quality standards are consistently met.
  • Provide proven recipes to maintain consistency in product quality.
  • Collaborate with the pastry team daily to achieve budgeted food costs and minimize waste.
  • Establish effective food cost control measures, coordinating purchasing, production, and proper usage of pastry ingredients.
  • Maintain pastry inventory by sourcing suppliers and placing orders to ensure optimal stock rotation while adhering to budget constraints.
  • Plan for upcoming events by ordering supplies in advance and understanding seasonal product availability to manage costs effectively.
  • Engage with prospective clients to discuss specialty offerings from the Pastry Department and represent the company at events and exhibitions.
  • Develop and manage the weekly schedule for the Pastry Department, accommodating individual requests for time off while ensuring adequate staffing levels.
  • Uphold hygiene standards within the Pastry Department and train staff in safe food handling practices.
  • Inspire and motivate the pastry team to perform at their best, providing training in specialized skills such as sugar work and chocolate artistry.
  • Participate in departmental meetings and communicate relevant information to the team.
  • Recommend disciplinary actions when necessary, ensuring compliance with safety standards.
  • Familiarize yourself with company policies and ensure that all staff are aware of the rules and regulations.

Qualifications

Supervisory Responsibilities: Oversee all Pastry staff.

Education & Experience:

  • Culinary training or apprenticeship certification is required; a culinary degree is preferred.
  • Food Handling and Sanitation certifications are preferred.
  • Experience in a luxury hotel culinary environment is advantageous.

Skills:

  • Ability to operate all kitchen stations.
  • Effective communication skills in English with guests, management, and staff.
  • Capability to work in a fast-paced, hot, and crowded kitchen environment.
  • Basic mathematical skills for food cost calculations.
  • Proficient in computer usage.
  • Strong problem-solving abilities, especially under pressure.
  • Attention to detail and ability to manage multiple tasks efficiently.
  • Ability to motivate and maintain a cohesive team.
  • Knowledge of fire and building safety codes.
  • Understanding of the luxury hotel and culinary landscape.

Compensation: The salary for this position is competitive and commensurate with experience and qualifications.
