Job Title: Pastry Sous Chef

We are seeking a highly skilled and experienced Pastry Sous Chef to join our team at Method Co. in Detroit, Michigan.

About the Role

The Pastry Sous Chef will be responsible for supporting the Executive Pastry Chef and overseeing the preparation and production of desserts, breads, and pastries for our restaurant outlets within Le Suprême and the Book Tower.

Key Responsibilities
  • Execute and oversee the production of menu items, ensuring high-quality standards and efficient kitchen flow.
  • Assist in the creation and execution of daily specials, ensuring they are current with seasonal trends and meet our quality standards.
  • Supervise the pastry cooks, providing guidance and training to ensure they meet our quality and safety standards.
  • Monitor and control labor and food costs, ensuring they are within budgeted parameters.
  • Attend weekly management meetings and corporate meetings, and hold monthly kitchen meetings to address any issues.
Requirements
  • Minimum 1-2 years of professional hospitality leadership experience in a similar environment.
  • Excellent product knowledge and ability to use and train team members on kitchen equipment.
  • Understanding of pastry and bread baking methods, and ability to train others.
  • Management certification according to state health department criteria procedures.
