Position Overview:

We are seeking a dedicated and skilled Chef de Cuisine to oversee culinary operations at Cookshop.

About Cookshop: Cookshop is a vibrant urban eatery that thrives on its dedication to seasonal ingredients and local farming. Our menu is a celebration of the freshest produce available, and our wine selection is updated weekly to provide guests with exciting new options.

Operational Hours: We serve Breakfast, Lunch, and Dinner from Monday to Friday, with a renowned brunch on weekends.

About The Bowery Group: Cookshop is part of The Bowery Group, which includes popular establishments such as Shukette, Rosie's, Shuka, and Vic's. The Bowery Group has received numerous accolades, including nominations for prestigious awards and recognition in various culinary publications.

Main Responsibilities:

  • Possess extensive knowledge and expertise in butchering, stock preparation, and a diverse range of ingredients.
  • Engage in weekly discussions with the Culinary Director to assess operations, objectives, and strategic planning.
  • Participate in monthly financial performance evaluations with Group leadership.
  • Oversee kitchen operations, manage inventory, and coordinate staff schedules using our HR platform.
  • Understand the importance of budgetary control and meet all food and labor cost targets.
  • Ensure food quality, presentation, and consistency during service by managing the line effectively.
  • Facilitate service and train chefs and expo staff to handle busy shifts efficiently.
  • Communicate effectively with kitchen staff, front-of-house personnel, and Group leadership.
  • Provide strong leadership to kitchen and restaurant staff.
  • Exhibit punctuality, focus, dedication, and flexibility to meet the restaurant's needs.
  • Adopt a proactive approach to problem-solving and management.
  • Create and maintain prep lists, place orders, and collaborate with vendors.
  • Uphold DOH food safety standards to maintain an A-grade kitchen at all times.
  • Maintain back-of-house facilities and proactively address issues to enhance kitchen equipment efficiency.
  • Train line and prep cooks and orient new hires.
  • Demonstrate commitment to prioritizing the responsibilities of this position.
