Key Responsibilities
  • Assist the Pastry Chef in overseeing the operations and activities of the culinary team engaged in preparing and baking foods in the Pastry Shop.
  • Prepare bread, rolls, muffins, biscuits, and dessert items according to recipe.
  • Temper products, including fruit reductions, chocolates, frostings, and pate a choux.
  • Decorate plates, cakes, tarts, petit fours, and other sweet treats.
  • Ensure the proper rotation and storage of specialty items and report any issues to management.
  • Maintain a clean and safe work environment, adhering to health regulations and HACCP standards.
  • Ensure proper use, maintenance, and cleanliness of all equipment and kitchen utensils.
  • Collaborate with the Pastry Chef to review advance menus and determine amounts, types, and methods for preparing baked goods.
  • Check par levels and production schedules to determine the variety and quantity of goods to bake.
  • Maintain open communication with colleagues and team members to meet department goals.
Requirements
  • High school diploma or general education degree (GED) required.
  • Food Handler's Card must be obtained before commencing duties.
  • 3 to 5 years related experience and/or training; or equivalent combination of education and experience.
  • Supervisory experience required.
Preferred Qualifications
  • Bilingual in Spanish preferred.
  • Knowledge of tempering products, fruit reductions, chocolates, frostings, and pate a choux.
  • Knowledge of food safety issues, including heating, cooling, storage, shelf life, and rotation.
  • Thorough knowledge of all pastry-related food equipment.
  • Knowledge of cost control methods, including purchasing, menu planning, and menu costing.
  • Working knowledge of computers, including Microsoft Outlook, Word, and Excel.
