Job Summary:
The Assistant Culinary Manager plays a vital role in supporting the Executive Chef in food preparation and cooking. This position involves coordinating the activities of kitchen staff and overseeing food service associates in the absence of the Executive Chef.
Key Responsibilities:
1. Prepare and cook food according to established recipes and production standards, ensuring timely completion of all orders.
2. Supervise and manage hourly food service staff, including responsibilities for interviewing, scheduling, payroll, training, and performance evaluations.
3. Maintain proper food storage in compliance with corporate, state, and federal food safety regulations.
4. Ensure adherence to food handling, presentation, portion control, and appropriate serving temperatures.
5. Uphold cleanliness and sanitation of kitchen equipment, supplies, and utensils, thoroughly cleaning workstations before leaving.
6. Keep display equipment clean and organized during service to meet sanitation and safety standards.
7. Engage with customers to address and resolve any complaints in a friendly and service-oriented manner.
8. Communicate relevant information to supervisors as needed.
9. Demonstrate a comprehensive understanding of daily menu items and effectively communicate them to team members and customers.
10. Monitor inventory levels and product deliveries, tracking production, consumption, and waste.
11. Perform additional duties as assigned.
