Job Summary

We are seeking an experienced and dynamic Sushi Chef to join our team in the Omakase Room, as well as support the Sushi program in other areas of the business. The ideal candidate will have experience working in Sushi or Omakase concepts, be familiar with receiving, handling, and breaking down fish to standard, and possess a keen eye for detail, strong people leadership skills, and a passion for hospitality.

Key Responsibilities

  • Deliver Exceptional Guest Experience: Provide outstanding hospitality in all guest interactions, exceeding expectations to create an unforgettable dining experience.
  • Fish Handling and Preparation: Possess knowledge and experience with various fish cuts, including loin and fillets, and be able to train the team on proper handling and preparation techniques.
  • Knife Skills and Fish Butchery: Demonstrate advanced knife skills for more complex fish butchery and be able to prepare all food products according to prescribed methods.
  • Food Preparation and Presentation: Cut fish, slice sashimi, and prepare nigiri with speed, accuracy, and consistency, ensuring a high-quality dining experience for our guests.
  • Leadership and Teamwork: Lead by example, demonstrating strong leadership skills, attention to detail, and a commitment to excellence in all aspects of the job, including sanitary practices, work detail, consistency, and reliability.
  • Recipe Knowledge and Section Setup: Acquire and maintain recipe knowledge, ensuring seamless execution of service, and be responsible for setting up the section to meet the needs of our guests.
  • Inventory Management: Ensure all items on station are properly stored, labeled, and dated, maintaining a clean and organized workspace.
