Key Responsibilities:
- Assist the Director in managing daily operations and strategic planning for the Food and Beverage Department to achieve monthly performance targets.
- Contribute to operational success by providing insights and recommendations for strategic initiatives; preparing action plans; and ensuring adherence to quality and customer service standards.
- Engage in the recruitment, onboarding, training, and performance management of team members; set clear job expectations and provide ongoing feedback.
- Ensure compliance with training requirements for team members through Great Wolf University.
- Collaborate with leadership on team development, training, and succession planning.
- Lead staff in anticipating and addressing guest needs to ensure optimal satisfaction.
- Work with leadership to oversee the preparation and presentation of food and beverages across all lodge venues, ensuring adherence to recipe standards.
- Coordinate with the Executive Chef and Purchasing Team to maintain proper inventory levels and compliance with health regulations.
- Assist in managing food costs through regular reviews of portion control and preparation practices.
- Ensure all food and beverage areas comply with local and national health and safety standards.
- Support scheduling and payroll processes in collaboration with F&B leaders and HR.
- Monitor equipment functionality, perform maintenance, and coordinate repairs as needed.
- Participate in inventory management to maintain budgetary controls.
- Conduct pre-shift meetings and service evaluations to uphold guest satisfaction and company standards.
- Assist the Director in achieving objectives related to Culinary, Stewarding, and Purchasing functions.
- Support the Purchasing & Stewarding team in maintaining par levels for kitchen supplies and ensuring compliance with safety protocols.
- Ensure compliance with safety inspection standards.
- Maintain adherence to local health and alcohol regulations.
Qualifications:
- High School diploma or equivalent experience
- 2-3 years of management experience in food and beverage
- Familiarity with procurement and inventory management systems
- Flexible scheduling availability, including nights, weekends, and holidays
- Strong written and verbal communication skills
- Proficient in P&L management
- Strong analytical abilities to interpret business indicators
- Proven leadership experience in achieving goals.
- Attention to detail and effective time management skills.
- Proficient in hospitality software, including Microsoft Office Suite and payroll systems.
- Successful completion of background checks and drug screening.
- Knowledge of food safety and sanitation regulations
- Experience with guest satisfaction and employee engagement initiatives
Preferred Qualifications:
- Bachelor's degree in hospitality, business, or a related field
- Experience in coordinating training programs for food and beverage operations
- Certification in food safety and alcohol awareness
- Effective conflict resolution and teamwork skills
- Experience with kitchen and bar equipment maintenance
- Experience in developing safety compliance plans
Physical Requirements:
- Able to lift up to 30 lbs.
- Able to bend, stretch, and twist
- Able to stand for extended periods
