The Culinary Supervisor is responsible for overseeing the daily food preparation and service operations in the facility. This includes supervising dietary aides, ensuring compliance with food safety and sanitation regulations, and maintaining a clean and safe kitchen environment.
Key Responsibilities:
- Food Preparation and Service: Prepare and serve high-quality food items to residents, visitors, and staff in the facility.
- Supervision: Supervise dietary aides in the absence of all managerial staff, ensuring daily production, safety, and sanitation procedures are followed.
- Inventory Management: Assist in inventory and proper storage of foods, supplies, and equipment.
- Equipment Maintenance: Ensure safe use and care of equipment by staff.
- Food Safety and Sanitation: Follow regulations regarding storage of food items, including covering, labeling, and dating of such items.
- Record Keeping: Record cooling temperatures in the cooling log on pre-prepped items in accordance with the Potential Hazardous Food Policy (PHF).
- Quality Improvement: Contribute to facility Continuous Quality Improvement Initiatives, identifying and implementing corrective actions as directed by the supervisor.
- Compliance: Maintain Corporate Compliance standards, HIPAA privacy, security, and confidentiality standards, and facility policies and procedures.
Requirements:
- Education: High school diploma or equivalent required.
- Experience: 2+ years of experience in food service or culinary management.
- Skills: Strong leadership and communication skills, ability to work in a fast-paced environment, and knowledge of food safety and sanitation regulations.
