Job Overview:

The Food Service Operations Coordinator is responsible for overseeing, guiding, and managing adults in custody (AIC) in the preparation and distribution of meals while engaging in large-scale cooking activities within a correctional facility.

This role is part of the American Federation of State, County, and Municipal Employees (AFSCME) and may qualify for Police & Fire (P&F) benefits through the Public Employees Retirement System (PERS), as stipulated by law.

Management of AIC Work Crews

Key responsibilities include: organizing workflow and assigning tasks to AIC workers; supervising AIC teams to ensure adherence to job-related regulations, policies, procedures, and security protocols; training AICs on safe, sanitary, and efficient food preparation and service methods; evaluating AIC performance for training and assignment decisions; conducting interviews and making recommendations for crew assignments; performing searches of AICs and work areas to prevent contraband; managing AIC timekeeping; ensuring cleanliness and order in the work area; and directing cleaning activities.

Food Preparation and Service

Key responsibilities include: leading, instructing, and coordinating AIC work crews to prepare meals according to established menus; measuring and combining ingredients per standardized recipes; performing various cooking techniques such as boiling, grilling, steaming, and baking; preparing a range of dishes including meats, casseroles, vegetables, and desserts; utilizing commercial kitchen equipment; serving meals in accordance with portion control guidelines; and overseeing food distribution to institutional wards or service lines.

Sanitation and Hygiene

Key responsibilities include: directing AIC work crews in maintaining a sanitary work environment, including proper food storage and cleaning of kitchen equipment; monitoring dishwasher operations; and ensuring compliance with health standards.

Inventory Management

Key responsibilities include: conducting daily inventory assessments of food and supplies; requesting necessary items from supervisors; verifying the quality and quantity of delivered products; assisting in ordering food supplies; and guiding AICs in the storage of food items.

Record Keeping

Key responsibilities include: maintaining accurate records of food prepared, served, and leftover; tracking kitchen equipment and food inventory; and documenting AIC work hours.

Positions are situated in food preparation areas of correctional facilities and require a commitment to working within the unique environment of the institution while enforcing security measures, including searches for contraband.

Minimum Qualifications

  • A High School diploma, GED, or equivalent education and one year of experience in a commercial food service environment.

OR

  • An associate degree in Food Service Management, Culinary Arts, or a related field.

AND

  • Must obtain a Food Handlers Permit within 30 days of employment.

Preferred Skills

  • Experience managing teams of 50 or more individuals.
  • Proven experience in kitchen management across various settings (e.g., restaurants, cafeterias, military dining).
  • Demonstrated ability to prepare a diverse range of foods.

Desired Attributes
