Description

Proof of the Pudding (POP) is proud to provide the food and beverage services at Georgia International Convention Center (GICC). POP offers fine-quality concessions and catering for meetings, exhibit hall booths, conventions, and special events. Georgia International Convention Center includes a 9,800 sq. ft. state-of-the-art culinary arts center and Georgia's largest ballroom at 40,000 sq. ft.

We are currently seeking an experienced Executive Sous Chef for Georgia International Convention Center, to help oversee Banquet Catering, Concessions and daily operations at Gateway Center Arena and Georgia International Convention Center. The Executive Sous Chef would oversee all culinary aspects including menu development, day to day operations, employee development, budget management, and kitchen management. The Executive Sous Chef will work closely with the Executive Chef and kitchen team to execute all onsite events.

Key Responsibilities:
  • Be a leader in the planning and executing event menus for Banquet Catering and Concessions Programs.
  • Maintaining the highest level of food quality through your culinary team
  • Capable of producing a consistent product in a timely manner
  • Always maintains the physical facilities under charge in a sanitary and orderly manner in accordance with good business practices and Health Department requirements.
  • Provides creative input for menu/ event ideas by staying current with industry trends and events at other POP functions.
  • Maintains a balanced budget with guidance from the Executive Chef on inventory, pricing, and staffing levels for all concessions events.
  • Keeping employee/team morale at the highest level
  • Planning large scale food production in accordance with the demands of business, the direction of Executive Chef and Company policies
  • Maintains proper inventory levels of needed paper goods and food items through working with the Executive Chef and Purchasing Manager.
  • Demonstrates good business practices in labor and cost controls, utilization of product and inventory controls to ensure highest quality of product in cost effective manner.
  • Assists Executive Chef with logistical planning and execution of events as directed.
Performs other related duties as needed.

Qualifications

Education and/or Experience
  • 2+ years of experience in a lead culinary role, experience in Sports & Entertainment, Large Scale Events, or Stadium Catering is preferred
  • Knowledge of Microsoft Office, internal and external email communications, and purchasing procedures
  • Knowledge of budget management, labor, and food costs.
  • Must live near or be willing to relocate to Atlanta, GA.
  • Proven leadership skills and the motivation to step up and run the kitchen when the Executive Chef is not onsite.
Specialized Qualifications:
  • Must be a natural leader, one who has fire in the belly to lead and love what they do.
  • Must be a chef who thrives on creativity, customer satisfaction and flavor profiles
  • Present oneself in a manner consistent with professional appearance, good personal hygiene and grooming, and respectful conduct to all external and internal customers / contacts at all times
  • Exhibit cooking skills, knowledge, and food handling skills consistent with contemporary training and requirements of similar position in industry
Work Environment

This role will mainly work out of Gateway Arena or GICC. This role requires some physical work with an emphasis on organization, event set up, and conducting inventory in a fast-paced work environment. This position will be moving in and out of structures and carrying items across miscellaneous terrains.

Adherence to Company Uniform Requirements outlined in the Associate Handbook, uniform requirements outlined in your orientation guidelines.

Non-slip shoes are necessary.

Physical Demands:
  • Prolonged periods of moving through kitchen, coolers, and storage spaces, and traveling to different venues across greater Atlanta
  • Physical endurance to work long shifts in a busy environment.
  • Bending, lifting, scooping, and carrying miscellaneous equipment and food items across uneven ground
  • Ability to perform physical tasks; such as but not limited to, lifting approx. 40 lbs.
