Job Description:

The Director of Food & Beverage is responsible for directing, organizing, and leading the Food and Beverage functions and colleagues to ensure high quality service of food and beverage to the standard set by the hotel. As a Department Head he/she directs and works with the management team and colleagues to successfully execute all outlets operations (L' Restaurant and bar, In-Room Dining, Pool, and Events); strives to continually improve guest, owner and colleague satisfaction and maximize the financial performance of the division.

General Responsibilities Include:

  • Plan and direct the functions of administration and planning of the food and beverage department to meet the daily needs of operation.
  • Leads the Food and Beverage team's focus on guest satisfaction and desired financial results, while fostering a positive culture.
  • Maintains and ensures compliance with all F&B policies, procedures and Forbes 5-Star / AAA 5- Diamond standards.
  • Proactively grows the business by partnering with the Marketing Team.
  • Regularly reviews Revinate and other data to identify areas of improvement: reviews results with colleagues to develop appropriate corrective action and ensure implementation.
  • Directs colleagues to strive for continuous improvement and excellence in all areas of responsibility, while focusing on accountability.
  • Maintains an effective training and inspection program of all F&B areas to ensure compliance of Health and Safety procedures and oversees departmental matters as they relate to federal, state and local employment and civil rights laws.
  • Directs the ordering of Food and Beverage equipment and supplies and directs the implementation of new service standards, supplies and equipment.
  • Maintains a strong working relationship with all hotel Department Heads, and Development Chef, to ensure effective communication for all operational issues.
  • Partners with Human Resources on recruitment and maintains a departmental onboarding program for colleagues to receive proper uniforms and appropriate job skills training to successfully perform job duties.
  • Monitors and Manages payroll function.
  • Understands the impact of Food and Beverage operations to the overall hotel financial goal. Implements effective control of food, beverage and labor costs among all sub departments.
  • Assist in managing departments controllable expenses to achieve or exceed budgeted goals.
  • Works with management team to meet and exceed colleague satisfaction goals.

  • Knowledge of overall hotel operations as they affect department
Physical Requirements:
  • Must be able to stand for long periods of time.


Qualification Standards:

Education: High School Diploma or equivalent required.

College or University degree preferred

Experience: 3-5 years senior management experience over all Food and Beverage operation required. Luxury Hotel experience preferred.

Grooming: All colleagues must maintain a neat, and well-groomed appearance (specific standards will be provided)
