Position Summary: The Regional Food andBeverage Manager (RFBM) is responsible for coordinating of all schedules,orders, inventories, and standards of the Food & Beverage outlets in Omahafull-service hotels. This is inclusive of, but not limited to supervision and controlof the restaurant and bar outlets to the required standards, within agreedbudgetary limits; managing all phases of group meeting/banquet functions heldin the Hotels; coordinate these activities on a daily basis; maintain theservices and reputation of hotels and act as a management representative togroup clients and guests. This position directly supervises food & beveragesupervisors, bartenders, food servers, cooks, and dishwashers.

Essential Job Functions
  • Achievement of budgetedfood sales, beverage sales, labor costs, profit margins and efficiency ratings.
  • Complete CustomerFollow-up calls on a timely basis.
  • Co-ordinate with salesdepartment all large group meeting/banquet BEO's, their specific grouprequirements with the services & facilities offered. This includesproposals, contracts, estimated and actual function statements.
  • Participate and/orsupervise daily/weekly/monthly deadlines; To include schedules, inventories,revenue forecast, tip allocations, etc.
  • Participate and inputtowards F&B Marketing activities.
  • Develop and maintain ofall department control procedures.
  • Attend, coordinate, andparticipate at weekly F & B meeting and Department Head meeting.
  • Assist in menu planningand pricing.
  • Supervise weeklypayroll input.
  • Remain available toHotel Staff at all times in case of emergency.
  • Participation inManager on Duty shifts as required.
  • Assure the maintenanceof bar/liquor control policies.
  • Assure the completionof weekly schedule and shift duties while maintaining a labor cost at or belowbudgeted labor percentage.
  • Assure timelycompletion and communication of all function costs and BEO's for packets.
  • Assure proper andconsistent ordering and purchasing of all F&B items.
  • Manage special orderrequests for all non-food related F&B items.
  • Consistent checks ofRestaurant and Banquet Food and Beverage quality, Banquet services andpresentation.
  • To circulate throughoutthe restaurant and bars and maintain a high profile with customers and staff toensure customer satisfaction.
  • Quality of meeting roomset-up.
  • Liaise on an on-goingbasis with the Sales Department to ensure all client needs and requirementswill be met.
  • Work with the Kitchenand Food & Beverage Supervisor to ensure all arrangements and details aredealt with.
  • Establish a rapportwith groups to ensure guest satisfaction and repeat business.
  • Minimize number ofcustomer complaints.
  • Ensure a professionalattitude and proper business attire when on property, ready to meet or servicea client at any time.
  • Staff professionalattitude and proper meeting Company appearance and uniform standards.
  • Teamwork-Relations withco-workers and management.
  • Responsible for staffhiring, training and development.
  • Department meetingbeing held quarterly. Regional Director of Operations and General Managers tobe notified of meetings in a timely fashion.
  • Personal developmentand growth.
  • Discipline of personnelwhen required.
  • Participation towardsoverall Hotel Maintenance and cleanliness.
  • Minimize the number ofWorkmen's Compensation claims.
  • Report any deficienciesin equipment and facilities through use of Quore.
  • Financial andanalytical interpretations of profit and loss statements.
  • Availability on nights,weekends, and holidays.
  • All other duties asdirected by the General Manager or Assistant General Manager.

Qualifications
  • Bachelor'sDegree preferred, not required.
  • Proficientin Microsoft Excel.
  • Completeknowledge of Fire Procedures.
