Being the lead in their responsible outlet - banquets, wedding cakes, productions, viennoiserie, etc. Leading through example, demonstrating with technique and precision to other Pastry Cooks. Working with the Pastry Chef to produce new menu items, tastings, VIP buffets, etc. Qualifications

Complete comprehension of baking math and recipe conversion Knowledge of the entire bakery; able to train other cooks in the kitchen Advanced skills in the specific areas: wedding cakes, viennoiserie, plated dessert and chocolate/sugar work Complete understanding of all daily operations, able to assist Pastry Chef and maintain the kitchen in the absence Able to work each shift in the bakeshop/train new employees on each shift Compliance with all serve safe & safety procedures/regulations Designated trainer for department Flexible with hours and schedule Minimum 5 years pastry experience; Culinary degree/school preferred Must have ability to communicate well both verbally and written in basic English. Reading and counting is essential.
