SUMMARY:

Responsible in overseeing the day-to-day operation of the kitchen, checks the methods of preparation, portion size, and timeliness of food preparation: controls food usage to minimize waste. Assist in the hiring, scheduling, training and career development of subordinates; provides input on performance evaluations and gives feed back to employees. Ensure kitchen is clean regularly and that all health and sanitation standards are maintained; notifies maintenance department of any need of repairs. Assists in cooking and carving of meats and preparation of difficult dishes during rush periods. This person must help the Executive Chef in writing new menu ideas for the Cafe and Sports Bar. Review the following day’s menus and completes requisition for food and supplies needed for varies storerooms and ordering food and supplies from primary vendors. Also maintain inventory control procedures. Assist sales, catering and banquet staffs with banquets parties and all special events.

ESSENTIAL DUTIES AND RESPONSIBILITIES

  1. Answers to the Executive Chef
  2. Guides and directs all kitchen employees and make sure they are performing all their job functions.
  3. Keeps the kitchen in a clean and safe manner at all times.
  4. Knows and follows all the St. Jo Frontier Casino policies and procedures.
  5. Performs any other job asked by management.
  6. Create new menus ideas for the Sports Bar, Banquets, and Snack Bar.
  7. Maintains Inventory Control Procedures.
  8. Maintain all Labor Controls established by the Food & Beverage Manager.

QUALIFICATIONS

To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill, and/or ability required.

All Employees must be knowledgeable to all Company policies and procedures, including fire and safety regulations. Must be at least 21 years of age.

EDUCATION and/or EXPERIENCE

Two to five years experience as Sous Chef with a two or four year degree in a related field or equivalent experience. Must have excellent employee’s skills and able to work as a team.

CERTIFICATES, LICENSES, REGISTRATIONS

Must be able to obtain and maintain a Missouri Gaming Commission License.

LANGUAGE SKILLS

Must be able to effectively communicate in English.

MATHEMATICAL SKILLS

Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals.

COMPUTER SKILLS

Must have Microsoft Office experience and basic computer skills.
