Job Overview

The kitchen manager is responsible for the overall operation, food preparation and execution of the kitchen and its staff. As a manager, you will have responsibilities of opening, closing and securing or disarming the building. The KM must ensure all production and cleanup processes run smoothly and in compliance with health and safety regulations. The KM also maintains kitchen inventory, food ordering, kitchen supplies and supervise all kitchen staff. You will be responsible for managing employee schedules and coordinating with the general manager to make menu and policy decisions. The kitchen manager must be available to work available shifts as necessary both on nights and weekends as well as mornings. The kitchen manager will report directly to the Taproom General Manager and, in some cases, the COO.

 

Responsibilities and Duties

  • Opening/Closing the Kitchen as well as arming/disarming building alarm
  • Managing daily kitchen operations including line checks, prep lists, smoked items, cleaning lists and opening and closing procedures.
  • Managing overall cleanliness of kitchen, walk-in coolers, equipment and floors.
  • Responsible for placing truck orders for food items and kitchen supplies.
  • Manage employee line/prep cooks and their shifts and cut staff as necessary.
  • Managing execution of catering events
  • Supervises kitchen staff and coordinates schedules
  • Ensures that the kitchen is kept clean and safe
  • Coordinates with general manager regarding food costs and menu item execution.
  • Ensures food storage and preparation comply with both health and safety regulations
  • Address any issues and solve problems quickly during shifts
  • Manage food quality and consistency
  • Managing proper staffing levels and hiring as needed.
  • Managing training for new and existing team members
  • Responsible for making the kitchen schedule 2 weeks in advance and sending to GM to be published by Friday of each week, being thoughtful of proper staffing needs for events and scheduled catering.
  • Streamlining the kitchen processes to maintain prompt service times
  • Regular cleaning standards

 

Qualifications

The candidate must express a wide array of qualifications that include but not limited to the following:

· Education Level : High School Graduate or above

· Experience: 3-5 years in a service-oriented industry. Management experience preferable

· Must demonstrate food safety knowledge and proper food handling training.

· Positive attitude and quick assessment of problems

 

Physical Requirements

· Must be able to lift over 50 lbs. and remain standing for extended periods of time

· Operated hand-held appliances and kitchen equipment

· Work in a fast-paced environment, rotating between front and back of house. This requires walking, bending, twisting, reaching, stooping, kneeling, crouching, pushing and pulling to handle or move objects weighing over 50 pounds.

· The ability to communicate and exchange information with coworkers and others is also required.

· The ability to comply with all public health and safety requirements.

 

Working Conditions

· High noise levels due to operations, customers, bands and overhead audio/visual noise.

· Varying schedule to include evenings, holidays and extended hours as business dictates.

· Must be authorized to work in the United States

· Indoor/outside seating
