Position Summary/General Description:

The Director of F&B Casino Operations reports to the Rio Puerco General Manager (GM). The Director of F&B Casino Operations is responsible for and oversees all food and beverage facets including personnel, menu mix, ordering, food production, and inventory. The Director of F&B Casino Operations is also responsible for the successful overall coordination, administration, and direction of all culinary activities on property, in alignment with LDC standards and in full accordance with all operational policies and procedures and gaming regulations. Incumbent will be an integral part of the success of LDC and a key member of the Management Team.

Essential Duties & Responsibilities:

  • Creates, develops and implements an effective strategy of organization with the Food and Beverage department, setting objectives for future growth and expansion.
  • Monitors market conditions that impact menu offerings, business volume, and profitability.
  • Coordinates all activities on property relating to recruitment, interviewing, orientation, transfers, promotions, and coaching, to ensure that they are carried out in accordance with established company policies and procedures with federal and state laws.
  • Meet departmental financial objectives by forecasting requirements, preparing an annual budget, scheduling expenditures, analyzing variances, and initiating corrective actions.
  • Sets priorities for all F&B Managers, providing guidance and assistance as needed.
  • Held accountable, to the highest degree, for the accuracy and thoroughness of the departmental records and reports.
  • Formulates, administers, and enforces departmental policies and procedures.
  • Participates in setting marketing policies and goals designed to attract Casino guests.
  • Ensure departmental compliance with applicable Federal and State laws governing Food and Beverage.
  • Confers with GM, to review property wide and departmental concerns, discussing needed changes and potential solutions.
  • Maintain appropriate staffing levels in the Food Beverage department by interviewing selecting, training, scheduling, evaluating, promoting, assisting with career development, disciplining and coaching associates, as needed.
  • Participates in special projects as requested by the GM and/or LDC Management team.
  • Ensures the quality of management operations in all areas of organization.
  • Establishes performance and profit objectives for short-term and long-term goals.
  • Review department reports, addressing potential conflicts and/or misinformation.
  • Facilitates the flow of information throughout the property, by organizing and presiding over regularly scheduled department meetings with the Food and Beverage Management Team.
  • Must be able to effectively communicate in one-on-one, small group situations, and to moderate-sized gatherings of associates, executives and/or community leaders.
  • Must be able to read and interpret the most complex of terminology including financial reports, wage surveys, contracts, leases, and legal documents.
  • Must be able to add, subtract, multiply and divide in all units of measure, using whole numbers, percentages, common fractions, and decimals, and work with mathematical concepts such as statistical inference.
  • Must be able to apply commonsense understanding to a variety of situations, in order to collect data, analyze facts, and determine appropriate response.
  • Demonstrates flexible, efficient time management skills, and the ability to prioritize workload.
  • Ensure a maximum level of service and satisfaction throughout the property, in the area of F&B, is achieved and maintained.
  • Build relationships and loyalty with guests through sincere and meaningful interactions (e.g., learn guests’ names and preferences; connect with them individually and professionally; smile; make eye contact and verbally greet guests from arrival to the property through departure; and provide fast and friendly service to guests).
  • Be a team player (e.g., work toward team goals and foster a collaborative and positive work environment; put the team first; assist coworkers; treat all coworkers with kindness, courtesy and respect; never engage in negativity; maintain openness to coaching, learning and improving; receptive to change and willingness to embrace challenges with team-spirit).
  • Develop a thorough knowledge of services, room locations, amenities, surroundings (e.g., gift shop, restaurants, theater, etc.), providing accurate directions, and information for guest inquiries about promotions and special events.
  • At all times maintain a courteous, positive and professional working relationship with all LDC personnel and the general public (e.g., coworkers, clients and vendors).
  • Work under pressure; maintain regular and punctual attendance including working odd and unusual hours, weekends and holidays.
  • Actively participates in LDC Management Capacity Program as required.
  • Perform additional duties and responsibilities as necessary or assigned.
