Lab Technician - Product Development (Chicago, IL)


Job Description: We are seeking a motivated and detail-oriented Lab Technician to join our innovative food product development team. This role is ideal for individuals passionate about creating unique vegan dairy alternatives, such as cream cheese and yogurt. As a Lab Technician, you will play a critical support role, working closely with experienced scientists to bring these products from concept to commercialization. This is an excellent opportunity for entry-level candidates or those early in their careers to gain valuable experience in a dynamic and unique laboratory setting.


This Lab Technician will primarily be performing experiments at the benchtop and pilot scale, and they will be working in a food laboratory setting. The role was described as about 60% being bench top/pilot sampling, and 25% lab management (sanitizing and cleaning the equipment). The scientists will provide the formulas for this person to make, and this person will be executing these formulas for dairy-free products.


Key Responsibilities:

  • Receive, label, and safely store ingredients and samples for testing.
  • Perform benchtop and pilot scale experiments, analyze results, and report findings.
  • Understand and operate all equipment and processes used in sample production.
  • Address and discuss any questions regarding experimental results.
  • Organize and store samples to ensure safety and integrity.
  • Manage lab and equipment sanitization and maintenance, including recalibration of equipment.
  • Maintain equipment records and daily work logs.
  • Prepare, pack, and ship samples as needed.

Must-Have Qualifications:

  • 0-2 years of experience (entry-level preferred).
  • Associate’s or Bachelor’s degree, with a preference for Food Science or Chemistry.
  • Experience working in a product development lab or pilot plant lab (academic or professional).
  • Basic lab management skills, including cleaning, recording, and analyzing data.

Nice-to-Have Qualifications:

  • Familiarity with lab equipment such as spectrometers, alcohol analyzers, refractometers, titrators, moisture analyzers, homogenizers, and deep freezers.
  • Experience calibrating lab equipment.
  • Knowledge of the food/CPG industry and cultured dairy products.
  • Startup experience or a strong willingness to work in a startup environment.
