  •  We are seeking an outgoing talented individual to join our crew in serving guests from all over. 
  • We believe the cook/chef is the most important crew member on Mary Day. 

Cook/Chef is responsible for:

  • for menuing, (old menus to use as references)
  • provisioning, (from various sources, with using local products when and where possible)
  • and creating delicious "down east" fare for up to 36 guests and crew.

All food preparation is done by hand and meals are created using an antique woodburning cook stove.

Accommodation for the cook is a small private cabin/pantry, yet living on board a traditionally rigged vessel is unique and how cool to be on the coast of Maine all summer

There is an assistant cook/mess mate available to assist with some food prep and works under the supervision of the cook. 

The cook creates a menu suitable for the upcoming cruise taking into account the cruise length, food allergies, special requests, and seasonal availability.  We welcome creative input. 

Cruises last 3, 4 or 6 days with a turnaround day in between.

While we are in port the cook is responsible for ordering and picking up all provisions. A personal vehicle is really handy but not a deal breaker.

The galley is the heart and soul of any schooner. Guests see, smell, and taste the cook's efforts 3 meals a day and have the chance to watch the cook prepare food on a wood cookstove. The ideal cook knows how to interact with guests while working so that guests feel welcome and part of the "family." Guests appreciate the home-cooked feeling that comes with meals.

The cook should be comfortable: 

  • cooking a variety of fish and meats.
  •  Fresh fruits and produce
  • Proficiency with quick bread and yeasted bread is a must. The hallmark of any windjammer cruise is baking. Most of our breads, cakes, cookies, pies, and muffins are made aboard from scratch.

The cook also performs other duties in the areas of food and final meal presentation including:

  •  serving food on platters (not individual plates), meals are "family style"
  •  garnishing of cooked items
  •  keeping food hot until meals are ready to serve.
  •  the cook should be able to work in the galley while underway. Motion sickness should not be an issue for anyone wishing to cook aboard a schooner.

Each cruise features a lobster picnic on the beach. 

  • The cook and assistant cook need to follow a checklist of items to be sure that everything is ready to be brought ashore for the picnic. 
  • The cook and assistant cook go ashore with the captain to help set up and prepare the lobster bake. 
  •  Usually, there is time to go for a walk or a swim while the picnic is happening.

We are looking for someone to start asap

and to stay to complete the sailing season (sailing season ends Sept 28th) with a week or two thereafter of closing up the galley.
