What You Will Be Doing
- Reporting to the Executive Chef, the Sous Chef is responsible for leading the kitchen staff and maintaining high food quality, consistency, inventory, and cost.
- Assists Executive Chef in monitoring kitchen activities, expediting orders to ensure quality taste or presentation, and taking on additional responsibilities in the absence of the Executive Chef to ensure culinary staff has proper direction.
- Trains and supervises kitchen staff on proper work procedures to ensure maximum productivity with minimum labor and food expenses.
- Understands and consistently follows standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures, and monitors adherence by all staff.
- Protects the integrity of all recipes an ensures they are followed consistently.
- Oversees food preparation and cooking and helps with hiring and training of new kitchen staff.
- Prepares a variety of food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment and cooks all food items in accordance with Company's specifications.
- Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.
- Conducts walk-throughs during each shift to monitor each station's product quality, production status, and inventory levels.
- Conducts walk-through of kitchens upon arrival to assess cleanliness and determines restaurant readiness; assesses inventory and production status and determines production needs.
- Communicates with Executive Chef and kitchen staff to ensure required prep work is completed for each shift.
- Communicates with Executive Chef, kitchen staff, and other Team Members to learn of daily menu needs, events, and important shift information.
- Assists in achieving profit objectives by measuring and managing food, waste and labor costs and controllable expenses.
- Assists in achieving continual growth in operational standards as demonstrated by improved efficiency and quality of food and kitchen operations.
- Keeps the workstation and kitchen equipment clean, organized, safe and sanitized and ensures proper safety and sanitation procedures are also upheld by all staff.
- Supervises that kitchen staff is closing the kitchen properly and follows the closing checklist for kitchen stations.
- Creates an environment that is warm, welcoming and filled with positivity for guests and staff.
- Upholds company standards and treats everyone with courtesy and respect.
- All other duties as assigned.
Ideal Candidate for this Position
- High School Diploma preferred.
- 5+ years of cooking experience in a high-volume kitchen or equivalent education preferred
- Experience in the hospitality field preferred
- ServSafe certified preferred
- Required to work a flexible schedule including off hours, nights, weekends and holidays
- Excellent culinary and guest service skills
- Excellent verbal and written communication skills
- Excellent critical thinking and decision-making skills
- Must be able to maintain tact and cool under pressure
- Ability to have a highly motivated and energetic personality
- Ability to take initiative and exhibit flexibility
- Professional appearance and demeanor
- Must be able to lift up to 50 lbs.
- Must be able to stand consecutively for up to 8 hours.
- Must apply and obtain the appropriate state occupational gaming license, which includes lifetime FBI criminal background check.
- Must pass drug testing as per company's Drug Free Workplace Policy and applicable background checks
